Grilled vegetables, jack cheese and sweet corn wrapped in a flour tortilla, deep fried and served with dipping sauce.

TORTUGAS

Fish Tostadas with chopped onions, cilantro, chile serrano, tomatoes and lime juice.  Choice of fish Halibut, Cod, Seabass.

TOSTADAS DE CEVICHE

Filled with meat and cheese, plain cheese, vegetarian or squash blossoms on our handmade corn tortillas.

Vegetarian includes: Onion, Mushrooms and Pasilla Peppers.

QUESADILLAS

Minature spinach and mushroom tamale topped with sour cream, green sauce and cheese.

MINI TAMAL

Crispy corn disks topped with Chicken, Beef or Pork, cheese and sour cream, guacamole, hot sauce, lettuce and cabbage.

MINI SOPITOS

Baby potatoes boiled in sea salt and served with a roasted red bell pepper and garlic sauce. (Cilantro and garlic sauce or aioli sauces are also  available).

PAPAS CON MOJO

Choice of Pork, Chicken, Shredded Beef, or Mashed Potato in a crispy tortilla. 

Vegetarian – Black beans in a crispy tortilla topped with sour cream and cheese.

MINI FLAUTAS

Spanish Omelet (Similar to a Frittata) – fried potatoes, onions and eggs.

TORTILLA ESPAÑOLA

  •  Corn Masa stuffed with Shrimp, Onion, Tomato and Garlic

  •  Chicharron and Cheese

Deep fried and topped with a remoulade sauce

EMPANADA

Starters

Birria (Pork, Veal, Lamb or Chicken), Carnitas, Steak, Chicken Fajitas, Chile Verde or Pollo Verde, Chile Colorado and Steak Ranchero.

PLATO de CARNE

Corn tortilla griddled with oil and sauce.

Choice of Prawn, Grilled Chicken, Cheese, Pork or Beef with grilled veggies and choice of Tomatillo Sauce or Red Sauce.

ENCHILADAS

  • Mixed seasonal fruit salads, with lime and Tajin dressing.

  • Ensalada De Nopal – Topped with your choice of Feta or Cotija cheese.

  • Persimmon Salad (Seasonal) – Persimmon with mixed greens, topped with Pomegranate, Lime dressing and Cotija cheese.

  • Mixed Green Salad – Cucumber, Grape Tomato and Sweet Corn, topped with Balsamic Vinegar and Oil.

ENSALDAS

Mole De Pollo or Enchiladas De Mole – Sauce is made with Chiles, Tomatoes, Chocolate, Nuts, Spices and Chicken Broth.

Chicken is simmered in sauce (leg, thigh or breast) or shredded thigh meat for Enchiladas, topped with sauce, lettuce, cabbage, Cotija cheese and Sesame seeds.

MOLE

  • Anaheim pepper stuffed with Monterey Jack cheese and dipped in egg batter and fried, topped with green or red sauce.  

  • Pasilla pepper stuffed with spinach, mushrooms, onions, sweet corn and cheese. 

CHILE RELLENO

Served with Handmade Corn Tortillas

Choices: Carne Asada – Pollo or Chile Verde, Carnitas, Adobada (chicken, pork or steak), Chorizo Con Papa, Grilled Veggies, Chicharron En Chile Verde, Chile Colorado and Rajas Con Crema.

TACO BAR

Your choice of:

  • Camarones A La Diabla – Spicy Prawns, 

  • Coctel De Camaron – Prawns, Tomato, Onion, Cilantro and Avocado served         in its own broth.

  •  Grilled Prawns and Steak sauteed with onions, mushrooms and Pasilla peppers.

CAMARONES

Traditional – Pork and Chicken and a variety of Seafood – Clams, Mussels, Squid, Fish and Prawns cooked in a Saffron rice. 

Vegetarian options are available.

PRICE PER PERSON

Site inspections may be needed for certain events and new locations. There is a minimum $50.00 charge and varies according to the address and complexity of the event.

SITE INSPECTIONS

A 20% gratuity is added to all on-site catering events.

GRATUITIES

Any menu changes must be made 10 days before the event.

MENU CHANGES

An estimated guest count is required at the time of booking. A final count is due 10 days prior to the event. This will be the amount you will be billed. If the updated amount is not received within 10 days of the event, we will use the estimate guest count as a guarantee. If the actual number of guests is greater, you will be billed the additional amount.

GUEST COUNT

A 50% non-refundable deposit is required at time of booking in order to secure your event date. This deposit will be credited toward your final billling.

DEPOSIT

The client is responsible for renting all rentals and managing the return of items. Villa Corona staff is available to assist in helping you determine what you need and what we provide as part of our catering service.

RENTALS

Payment in full is due at time of the event. We accept checks, cash, and credit cards. Delivery fees vary according to address and complexity of delivery.

FINAL PAYMENT

Shortbread cookie filled with Dulce de Leche Caramel topped with powdered sugar.

ALFAJORES

Fried pastry sprinkled with cinnamon and sugar.

CHURROS

  • A constant favorite. Irresistible, dense chocolate squares.

BROWNIES

A rich custard topped with caramel sauce.

FLAN

A scoop of vanilla ice cream in a crispy flour tortilla bowl, topped with cinnamon, sugar and maple syrup.

BUÑUELOS

Light and delicious walnut cookies topped with powdered sugar. A rich part of Mexican history.
